PEANUT BUTTER PROTEIN BARS

If you are looking for a healthy sweet treat that doesn’t require turning your oven on, look no further. These soft and chewy bars are packed with healthy fats from peanut butter and flaxseed and loaded with protein and complex carbs. They make a great snack for on-the-go eating or after as a postworkout snack. You can add as little (or as much) mini chocolate chips as you like. These are way better than store-bought!

INGREDIENTS

  • 3/4 cup creamy peanut butter
  • 1/3 cup honey
  • 2 tablespoons coconut oil
  • 2 cups rolled oats
  • 1/2 cup vanilla protein powder — about 2 scoops, depending upon your brand
  • 3 tablespoons ground flaxseed
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/3 cup mini chocolate chips

DIRECTIONS

  1. Line an 8×8 or 9×9-inch baking pan with parchment paper, leaving overhang on two sides like handles.
  2. Place the peanut butter, honey, and coconut oil in microwave-safe bowl and heat in microwave in 30 second increments, stirring between until mixture is combined.
  3. In a large separate bowl, add the oats, protein powder, flaxseed, cinnamon, and salt. Stir to combine. Add the peanut butter, honey and coconut oil mixture. It will seem dry at first but will come together as you stir.
  4. Press evenly into the prepared pan, sprinkle with mini chocolate chips and refrigerate for 1 hour or until firm.
  5. Lift the bars from the pan using the parchment handles and transfer to a cutting board. Slice into bars of desired size and enjoy!
